This strata is a great way to enjoy any plain bread you might need to use up.

Ham & Cheese Strata

Serves about 8.

Preheat oven to 350°F.

  • 20 ounces Texas Toast bread, white bread, or sourdough bread
  • 8 eggs
  • 1 1/2 cups milk
  • 1/4 cup dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon coarse ground pepper
  • 4 green onions, chopped
  • 2 cups ham, diced
  • 6 ounces cheddar cheese, grated
  • 6 ounces gruyere cheese, grated

Rip the bread into about one-inch pieces and place it in a large bowl.

Whisk together the eggs, milk, mustard, salt, and pepper until the eggs are well beaten. Pour the wet ingredients into the bowl of bread and stir until the bread is well-coated.

Add the onions to the bread mixture. If the ham is packed in juices, drain the excess juice and then add the ham to the bowl. Add the cheese and stir everything together.

Butter or spray non-stick spray the inside of a 9X13 (or equivalent size) baking dish.

Place the strata into the baking dish and bake for about 45 minutes or until the eggs are firm and cheese is melted & bubbly.  If you like, serve with Hollandaise Sauce.
