Almond Tiramisu French Toast

  • 1 recipe Almond syrup (make ahead, recipe below)
  • 1/4 cup hot water
  • 2 tablespoons instant coffee
  • 8 eggs
  • 1 1/4 cup heavy whipping cream, divided
  • 2 tablespoons almond extract, divided
  • 1 tablespoon ground cinnamon
  • 4-6 tablespoons butter
  • 8 slices white bread
  • 2/3 cup sugar
  • 8-ounce container mascarpone cheese
  • 1 cup sliced almonds
  • 4 tablespoons cocoa powder

Place instant coffee and hot water in a medium-large bowl. Mix in eggs, 1/4 cup of the heavy whipping cream, 1 tablespoon of the almond extract, and cinnamon. Whisk well.

Heat a large frying pan to medium heat and place some butter in the pan to melt. QUickly dip white bread into egg mixture so it is coated on both sides and then place in frying pan to cook on both sides until golden brown. This should take 3-4 minutes on each side. Continue process until all slices of bread are cooked. Set toast aside and turn off heat.

Whip remaining 1 cup of heavy whipping cream until it reaches stiff peaks. Add sugar, mascarpone cheese, & remaining 1 tablespoon of almond extract and whip for a couple minutes until well-combined and fluffy. Scrape down sides as needed.

To layer, place one piece of toast on a plate, spread with some mascarpone mixture, top with the second piece of toast. Add a dollop of mascarpone mixture, sliced almonds, and a sprinkle of cocoa powder. Drizzle with almond syrup.

Almond Syrup

  • 1 cup water
  • 2 cups sugar
  • 2 tablespoons almond extract
Bring the water and sugar to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and stir in the almond extract; simmer 3 more minutes. Allow to cool to room temperature before using.
