This Breakfast Sub Sandwich is a super fun breakfast idea for when you have overnight guests.

Breakfast Sub Sandwich

Makes about 12 servings.

  • 1 four-foot loaf of French bread (or two two-feet loves with one end trimmed off so they can be pushed together)
  • 1 stick of unsalted butter
  • 1/2 pound high-quality cheddar cheese, thinly sliced
  • 1 cup mayonnaise (optional)
  • 16 eggs, fried
  • 24-32 ounces ham (not honey), sliced
  • 3-4 large fresh tomatoes, thinly sliced
  • 12-16 ounces sprouts (or, if preferred, Romaine lettuce)

This sandwich is a fun, easy way to impress your family on Christmas morning. It’s easy to make and can be served with simply juice or these orange creamsicle smoothies for a perfect breakfast after opening presents. The best part about this sandwich is that everyone can help.

First, purchase the longest loaf of bread that will fit in your oven. If you want to buy one bigger than your oven, you can cut it to a size that will fit or skip the oven part. Whatever works best for you will be great to make things easy on yourself.

Using a serrated knife, slice the bread down the middle of the top & bottom of the loaf. Spread with butter. Turn oven on broil and broil bread with butter side up just until it’s golden brown. Watch closely as this happens quickly.

If you like, you can heat up the ham in a pizzelle maker for a fun design, or you can fry in a frying pan just until hot. We’re always looking for funky new ways to do things at our house.

Timing is everything with this work of art, so I recommend keeping the eggs and ham slices in the oven on a cookie sheet and covered with foil at 170°F until you are ready to puzzle together with your sandwich.

This is when things get really exciting. Spread mayonnaise on one or both sides of bread after they come out of the oven.

Place sprouts, tomato slices, eggs, and ham slices on the bottom piece of bread.

If you happen to have a 4-foot platter handy, you are a luckier foodie than I. If you don’t happen to have one, just unroll some kraft paper and present your sandwich upon it.
