Preheat oven to 300°F.
- 2 cups oatmeal
- 1 cup sliced almonds
- 1 cup chopped pecans or walnuts
- 1/2 cup chopped pitted dates
- 1/2 cup raisins
- 1/2 cup dried cranberries or dried chopped cherries
- 1/2 cup ground flaxseed
- 1/4 cup unsalted butter, melted
- 2/3 cup honey
- 1/4 cup brown sugar
- 2 teaspoons maple extract
- 1 teaspoon sea salt
- 1/2 – 1 cup cup mini semi-sweet chocolate chips (optional)
Prepare a 9X13″ pan by lining it one direction with parchment paper and then the other direction with parchment paper.
Line a half sheet pan with parchment paper. Pour the oats, pecans, and almonds on the tray. Bake for 10-15 minutes to toast them. Remove from the oven when done.
Place all ingredients, including toasted oats & nuts, in a large bowl and mix until dry ingredients are well coated with the wet ingredients.
Pour the mixture into the parchment-lined baking pan and press it down.
Place pan in the oven to bake for 25-30 minutes. Let them cool until the pan is cool enough to place in the refrigerator. Refrigerate for a couple of hours.
After they have chilled, lift them out of the pan using the parchment paper and then cut into bars or squares.
