  • 2 chicken breasts
  • 3-4 tablespoons olive or grapeseed oil
  • Sea salt
  • Coarse ground pepper

Sometimes chicken breasts still have the tender attached. If you see one, you can cut it off and cook it as well or save it for another meal.

Place a chicken breast on a cutting board. Lay your palm on top of the piece of chicken and carefully slice the breast in half almost all the way across. Repeat with the second piece of chicken.

If you like, you can unfold the breast so it looks like a butterfly and then place it in between two sheets of plastic wrap or in a large Ziploc baggie. Use the flat side of a meat mallet to pound it until it is thin. This step is recommended because it will help it cook faster and more evenly.

Sprinkle both sides of the chicken breasts with salt and pepper.

Preheat a large frying pan to medium heat and drizzle it with oil. Heat the oil and then add the pieces of chicken. Cook for a few minutes on each side or until the thickest part reaches 165°F and then removed them from the pan right away and rest on a plate for 5-10 minutes before serving.
