How to Make Omelettes
- 1 tablespoon butter
- 2 eggs
- 1 tablespoon milk, whipping cream, or water
- Sea salt
- Coarse-ground pepper
- 1/4 cup shredded Black Forest or smoked ham (not honey ham)
- 1/2 cup shredded white cheddar cheese
- 1 green onion, chopped
Using a fork, whisk eggs and milk together.
Place pan over low heat. Let the butter melt in the pan while it preheats. Spread the melted butter around.
Stir salt & pepper into the eggs right before cooking.
Pour eggs into the pan. Using a spatula, stir the eggs around while allowing the raw egg to fill in spaces that occur and pour under the cooked parts. This step will last about 30 seconds. Do not flip the eggs and this part will go quickly as to not allow the eggs to brown on the cooked side. They should be done but pale in color. Gently run a spatula around the sides, freeing the eggs from the edges of the pan.
With a gentle shake of your wrist, lift the pan a bit and shake the handle of the pan back & forth to help the eggs release from the pan.
When eggs are mostly firm, place ham, cheese, and green onions on one side. Using a spatula, fold the omelet into thirds or half and slide the omelet onto your plate. Practice makes perfect; but, in the meantime, topping sprinkled on your practice omelets cover a multitude of mistakes.
