Nordstrom Coconut Royale Cookies with Macadamia & Chocolate Chips
Makes about 30 cookies.
Preheat oven to 350°F.
- 2 cups sweetened, flaked coconut
- 1 cup macadamia nuts, chopped
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla
- 1/4 cup milk
- 3 cups flour
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking soda
- 12 ounce bag semi-sweet chocolate chips
If you’d like to, you can toast the coconut and the macadamia nuts to enhance their flavors before adding them to the dough. Just heat a frying pan over medium heat. Place the nuts in the pan and toss frequently while they toast. They’re ready when you can smell the delicious flavors. Remove them from the pan and set aside. Repeat the process with the coconut and set it aside as well.
Cream butter and sugars together in a mixing bowl.
Add eggs, vanilla, and milk and combine well.
In a separate bowl, whisk together the salt, baking soda, and flour. Then add the dry ingredients to the wet ingredients and stir until about half-way mixed together.
Add the chocolate chips, coconut, and macadamia nuts. Finish mixing on a low setting until the dough comes together.
Place a parchment paper upon a cookie sheet. Use an ice cream scoop or large spoon to measure cookie dough. Place about 9 of the same size cookies per pan with plenty of space in between.
Bake for 15 minutes (less if you’d like them softer).
