Oatmeal Cookies are as classic as after-school specials. Let’s go old school!
It’s all about the molasses, baby.
Oatmeal Cookies
Makes 12 large cookies or 24 small cookies.
Preheat oven to 350°F.
- 1 cup unsalted butter
- 1 1/2 cup brown sugar
- 1/4 cup white sugar
- 2 eggs
- 2 tablespoons molasses
- 1 teaspoon vanilla extract
- 1 3/4 cup flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 2 3/4 cups oatmeal
- 1 cup raisins (optional)
Use a cookie scoop to make small cookies or an ice cream scoop for large cookies. Drop cookies onto a parchment-lined baking sheet. Leave enough space for them to spread out while baking.
Bake for about 15 minutes or until the cookies are done to your liking.
