Peach Cobbler is a perfect summer treat. Top with high-quality vanilla ice cream for one of the best desserts of your life.
Peach Cobbler
Serves 10-12.
Preheat oven to 350°.
Peach Filling
- 3-4 pounds fresh peaches, peeled, pitted, and sliced or diced
- 1/4 cup sugar
- 2 tablespoon fresh lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Place peaches, sugar, lemon juice, cinnamon, and nutmeg in a bowl and stir together. Spray a 9X13″ baking pan with non-stick baking spray. Place the peach filling into the baking pan.
Set aside while you make the cobbler topping.
Cobbler Topping
- 2 cups flour
- 1 1/2 cup sugar
- 2 teaspoons baking powder
- 1 teaspoons sea salt
- 1/2 cup unsalted butter, softened
- 1 cup buttermilk
Place flour, sugar, baking powder, and salt in a mixing bowl. Stir together and then mix in the butter. After the butter is evenly distributed, mix in buttermilk.
Place by spoonfuls evenly over the peaches. The cobbler topping should look like, well, cobblestones.
Shiny Topping
- 1 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1 cup boiling hot water
Place sugar, cornstarch, and salt in a small bowl. Whisk together and then sprinkle over the cobbler topping.
Finally, pour the hot water over the shiny topping.
Bake in the preheated oven for one hour.
