If you love freshly grilled Mexican food, you’ve surely enjoyed pico de gallo salsa on your favorite dish. While many peeps focus on trying to get a grilled chicken or beef recipe down to a science, it is actually the pico de gallo that brings the fresh & sassy flavor to the fiesta.
One of the great things about making it homemade is that you can make it as spicy or mild as you like. This can be made a few hours in advance and refrigerated so that the flavors have time to fully blend together.

Pico de Gallo Salsa
- 8 Roma tomatoes (other varieties of tomatoes will work just fine), diced
- 1/2 red onion, diced
- 1/2 English cucumber, diced
- 1 bunch of cilantro, chopped
- 1 Jalapeno pepper, minced (wash hands well after cutting pepper)
- 3 garlic cloves, minced
- 2-3 tablespoons fresh lime juice
- 1-2 teaspoons cumin
- Sea salt
- Coarse ground pepper
Place all the ingredients into a medium-large bowl and stir together.
She is gorgeous, healthy, and oh-so-easy to make. For the guacamole, just mash an avocado, stir in Pico de Gallo Salsa and add a dash of salt. Stir & serve with tacos, tortilla chips, or another favorite Mexican dish!
