Scandinavian Salad
Dill Salad Dressing
- 1/2 cup sour cream
- 3/4 cup buttermilk
- Zest and 1 tablespoon of juice from one fresh lemon
- 1 package fresh dill, chopped or processed
- 1/2 teaspoon sea salt
- 1/4 teaspoon coarse ground pepper
Salad
- 5 ounces romaine lettuce, spring lettuce, or your favorite chopped salad greens
- 1 English cucumber, thin sliced
- 1/2 red onion, thin sliced
- 8 ounces smoked salmon, chopped
- About 2 ounces non-pareil capers, drained (or, if you prefer, English peas)
Place the sour cream, buttermilk, lemon zest, lemon juice, dill, salt, and pepper in a medium-sized bowl. Whisk together and set aside.
Place lettuce onto a platter or divide it onto plates. Drizzle with the salad dressing.
Top with cucumber slices, sliced onions, salmon, and capers.
