Star Noodle in Lahaina, Maui, Hawaii has me goin’ all double negative. Let me explain. You cannot go to Star Noodle. There. I said it. My 8th-grade grammar teacher would not even be able to not be pleased.
“There’s a great noodle restaurant we should go to while we’re here,” Husband said. “Oh, okay,” I replied. I wasn’t super thrilled to check out yet another pho restaurant. I mean, I like pho, but on vacation? There’s pho on every block in Seattle.
After a long, entertaining drive and accepting a handwritten “business card” from our Lyft driver who, by the way, is a travel agent and grows her own weed, we arrived at Star Noodle.
Maui is chill but it is never boring.
Honey, I had a feeling we weren’t in a Seattle pho restaurant anymore.

No matter how far the drive (only about 15-20 minutes from West Maui so I might be exaggerating), Star Noodle was worth it. This classy, humble restaurant was packed… and for very good reason.
What goodness was awaiting me? Everything family-style and everything high-quality.
We shared a lovely, fresh green salad and then moved on to a rib-eye steak cooked just how we like it and topped with Ko Chu butter on a sizzling skillet.
Perfectly grilled teriyaki chicken, scallions, sesame seeds, and pickled red onions on a bed of red cabbage. I shall never, ever forget.
All this, paired with garlic noodles with dashi topped with fried garlic and scallions. Thank goodness for my poor chopstick skills which slowed my experience down.
What the pho was I thinking? Star Noodle was not only not another dingy Seattle pho restaurant; it was a magical dinner. Star Noodle was the best food we had while on Maui; and, easily, the best Asian food I’ve ever had. Star Noodle, I love you. I can’t wait to return and try to new eats from your menu.
I shall even ride in a sad minivan with a Lyft driver / travel agent / weed dealer who can’t afford real business cards and has questionable people skills to come see you again.
