Back in the late eighties I went to a tiny cafe for a work meeting and had The World’s Best Breakfast Sandwich.
It is ever so simple but to this day it remains my favorite. The fresh sprouts, tomatoes, and grainy bread lighten up this traditional greasy spoon favorite.
The World’s Best Breakfast Sandwich
Makes two whole sandwiches.
- 4 slices multi-grain bread (or an Everything Bagel)
- 4 tablespoons butter
- 4 thin slices Havarti cheese
- 4 thin slices cheddar cheese
- 8 ounces Black Forest Ham, thinly sliced
- 4 eggs, fried to your preference
- 1 cup fresh sprouts
- 1 fresh tomato, sliced
- 2 tablespoons mayonnaise
Preheat a large frying pan to medium heat and turn on the broiler oven. Butter one side of each slice of bread and place all the slices butter side down in the pan. Cook until the buttered sides are golden brown then remove from pan and place two slices of bread on a baking sheet butter side down and set aside the other two.
Place Havarti & cheddar cheese on both slices. Leave the oven door open a crack so you can watch them closely and broil until nice and melty. Remove from the oven and set aside.
Place about 14 slices of ham into the frying pan over medium heat and cook for a few minutes until both sides are browned a bit. Remove from heat and when cool enough to touch, roll up each piece of ham and place about seven on each slice of bread with melted cheese. The rolling of the ham is not necessary, of course, but it adds a beautiful somethin’ somethin’ to this sammie. Set aside.
Fry eggs in the frying pan until cooked to your liking. Place two eggs on top of ham on each sandwich. Top with sprouts and then sliced tomatoes.
Spread mayonnaise on the remaining two slices of bread and place each on top of the sandwiches. Cut each sandwich in half if desired when serving.
Oh, and that tiny cafe? It still stands. No, it thrives. With eats like this, no one is surprised.
